Just bought a CP4 for my daughter. Have two FC3 pedals. Can the FC3 even be used for pedal 2? And lastly, how do I set the second pedal to be as a piano Sostenuto?

No, you need a standard TS connector FC4/FC5 type momentary foot switch plugged into the Assignable Foot Switch jack, and FS = 66.
