Able to do something similar as MOXF Multi-Track Hybrid Perf?

I was looking for something and ran across a tutorial by Hans-Peter on the MOXF's Multi-Track Live Hybrid Performance mode. The link is here:

The programming was done such that organ, for example, was replicated on several different tracks so that single-finger chords could be played. This is idea was done in a couple places and a total of 11 tracks were used. In MODX - this would translate to using 11 PARTs. MOXF allows for simultaneous control of these 11 tracks. It appeared to me that each track allowed for 8 elements. As far as I know, MODX could not replicate without use of external cabling or gear. Is this an incorrect understanding? If not, what is the recommended method to reproduce this type of setup where so many groups of elements can have unique splits, note offsets, pitch bend settings, etc?
