I'm going to give an example using the preset "DJ Montage" because I know it defaults with the Master ARP turned ON.
Action 1: Edit and save your Performance
1) [CATEGORY SEARCH] to load the built-in Preset "DJ Montage"
2) Press [ARP ON/OFF] button to turn master ARP off. The button will go from amber to off.
3) Press [STORE], name the Performance. I chose the name "J.ARPoff.DJ Montage". "J." is something I can search for to find all of my custom Performances. "ARPoff" tells me what's been done. You can use your own system.
Action 2: Save current Performance into Live Set (same for any Performance)
4) Press [LIVE SET] button
5) Navigate to the page with open spots or place you want to put the new Performance
6) Touch "Edit" button on touchscreen upper-right
7) For a new slot - press an empty [+] button where you want to place the current Performance in live set.
8) Press "Done" button on touchscreen upper-right
Note: DJ Montage has SCENE 1 with Main ARP turned on. When I load "J.ARPoff.DJ Montage" the master ARP button is turned off as I have saved it. Even though SCENE 1 is selected. The change I made to the button takes precedence. If I press the SCENE 1 button - the master ARP is turned ON.
If you do not want scenes to turn the master arpeggio on - then you need to edit the scenes. However, your question was about changing from normally ARP ON to ARP OFF (I assumed ARP master here). This is exactly what the above 3 steps accomplish followed by 5 steps to save to live set.

It is not clear to me (exactly) what you are trying to accomplish, but perhaps this additional information will help:
Many of the factory Single Part programs default with the Part ArpOn/Off Switch set to On. If/when you are creating your own Performances, you can opt to turn the Part Arp On/Off = Off to reflect whatever you require.
The fact that they are typically set to ON is not an issue because the Master Arp On/Off Switch must be On, additionally, for any of the Parts with an active Arp to actually run.
Managing what happens to any of eight available Arpeggiators is handled on a per Scene basis, including the condition of the Master Arp Switch and all eight potential Part Arp Switches.
Arpeggios are started, not by a button, but only by a Note-on event. You can define where on the Keyboard the Arp (trigger) Note-on event must occur (Arp Note Limit). Also you can define what Velocity Limit range will trigger the Arp to start, on a per Part/Arp basis. In other words, you can play the keyboard with triggering the Arp Phrases if you program your Part Arp Note and Velocity Limits accordingly.
Select the Part
Press [EDIT] > “Arpeggio” > “Common”
Here you can define how the Arp Phrases assigned to this Part will behave.
Of course, you have to store your preferences to a User Performance — if you want this level of individual control… why is this a problem/issue? I don’t understand. When you EDIT you must STORE your Edit — and yes that means to the internal User Bank, or to MODX CONNECT program, or to the Soundmondo app.
You will find many Performances that Scene 1 does not include Arpeggio playing when you touch the keys… this is either because the Master Arp Switch is stored OFF, or the Part Arp is either set to a MUTE Arp Phrase, or the Part Arp Switch is stored OFF.
Alternate Methods:
If you simply want to disable the Arpeggiator (all eight Part Switches plus the Master Arp Switch) you can do so instantly…
by pressing [SHIFT] + [ARP ON/OFF] (Master)
The Arp On/Off button will flash indicating all Arpeggios are Bypassed. You will see a drop-down indicating Arpeggios are Bypassed.
To release this bypass simply press [ARP ON/OFF] it stops flashing and remains ON.
Extra Credit
Certain Parts maybe programmed to a setting called “Arp Play Only” — this means if the Arp On/Off is Off (stopped), the Part will not respond to the keyboard. This is very useful with items like Drum Kits and any sounds you don’t want to play normally… meaning you only want the assigned Arpeggios Phrase to interact with the sounds.
Otherwise you will hear Drums and percussion or what ever sound was responding to Arp Phrases, they will now play normally. Not necessarily what you want.

Il mio problema era solo che passando in live set dalla perf. 3 alla 4, volevo che la 4 entrasse subito senza ARP, per la continuità del suono.
My problem was just that by going live set from perf. 3 to 4, I wanted the 4 to go straight in without ARP, for the continuity of the sound.
Performance slot 3 in Live Set would be the original Performance with ARP turned on by default. Then Slot 4 would be your modified Performance with the ARP turned off by default. If one of these two Performances is a factory Preset - then you would have one Performance as a preset and one as a custom User Performance. If these are both custom Performances then you would have [STORE]'ed two Performances and named them differently so you can place one User Performance in Live Set slot 3 and a different (modified to turn ARP master OFF) in Live Set slot 4.
