Only the first sound on my editor is active, the others underneath are all greyed out. Any idea how to activate them?

It's a DEMO limitation. You need to get a paid version to enable all features.

Your screen shot shows the John Melas “Performance Editor”... a Performance that contains one Part. The empty slots are for Parts, not Performances. It edits one Performance at a time.
Call up a Factory Preset like “CFX + FM EP”
It is a 5 Part Performance.
It will occupy the first five Part slots.
Remember each Performance can have from 1 to 16 Parts
