What are the best stereo headphones to use with the XF? I would like a set that have individual volume controls.

Welcome to Yamaha Synth!
I don't know of any high-end headphones with volume control, no less individual volume controls.
If you plan on using the headphones with the XF, we recommend Yamaha HPH-MT220 headphones. They connect directly to the dedicated Phones jack and the volume is controlled by the main Motif XF Volume slider.
