The Yamaha-Stenberg USB drive downloads on my iMac OS Monterey, but when I install it there's nothing there. I just get an "about Steinberg USB Drive" box when I try to open it. And my application folder shows only a few hundred Kilobytes of data, not the 5MG the program is supposed to take.

I've installed YSUSB_V311_Mac.zip already and in my "Downloads" directory - I also see only the documentation files. Originally the driver came with a .pkg file ("Yamaha Steinberg USB Driver V3.1.1.pkg" ) that was removed after the install. After installing - there are no files for the driver. What I'm describing here isn't the "Applications" folder - but the installation folder where I unzipped the driver.
Under Applications is a "Yamaha Steinberg USB Control Panel" with the About button you describe. That's it. It doesn't do anything. That's "right".
The uninstall and driver guide are not in "Applications" - but in your download directory. Probably without the .pkg file since the end of install asks to clean that up. The downloads directory will have 1.9MB of docs and uninstall helpers.
