I am trying to create some performances on my XF7 and need some advice. Is there any way to copy effects from a Voice to a Performance?
I am trying to create a performance with different piano Voices so that during a gig I can change piano sounds by moving sliders rather than pushing buttons.
I've tried to place piano Voices in Performances but some of the piano Voices sound very different in Performance mode than in Voice mode.
Any help would be appreciated.

Yes.
Copying a Voice to a PERFORMANCE or MIXING
I am trying to create a performance with different piano Voices so that during a gig I can change piano sounds by moving sliders rather than pushing buttons.
When a VOICE is activated in a PERFORMANCE it automatically brings along its two Insertion Effects (they are part of the Voice). It does not bring along the Reverb or Chorus processor as they are a part of the PERFORMANCE mixer... so all four PARTS share the same Reverb and Chorus, each PART has a SEND AMOUNT control. That's why they sound different when you place them together.
By layering four pianos in a PERFORMANCE and moving sliders to bring them in and out, you will be running your XF7 out of polyphony very rapidly. I hope you do not plan to use the SUSTAIN Pedal (but of course you plan to...)
All four PARTS will be playing simultaneously and therefore polyphony is used even when you are not hearing a particular piano. If it works for you that's great - I'm just going to make you aware of that situation.

If Performance Control is active and a Voice is soloed (or all others muted), is polyphony still being used in the background for non-audible voices?

On the Motif XF, yes. Muting disconnects the audio output, but polyphony is still used.
If you wish to switch between sounds that are combined you can use the MASTER mode function that lets you turn On and Off Zone Switches via your front panel numbered Track buttons, 1-8. This feature was added in one of the firmware updates. Place your Voices in Parts of a MIXING, (you can Move your Performance to a Song/Pattern MIXING as a "Template"... this places each Part on a separate channel). See page 197 in the Reference Manual: "Copying the Performance Edit settings to a Mixing (Template Performance)—[SF2] Perf"
Associate that MIXING with a Master. Each gets a Zone (8 maximum), on its own Channel, then you can, from the main Master screen, activate [PERFORMANCE CONTROL]
An active Zone will be lit, you can turn Zones on and off, making any combinations you desire- and when the Zone Switch is Off, no polyphony is used!
