When I change the master volume of a performance in the mixing screen or in the edit screen and store the performance, it always goes back to the original volume. Is there a way to change the overall perfomance volume without doing it inserting an effect?
That should just work fine. That’s what I am doing. Are you maybe storing as a new performance? That would happen for example if your are changing the master volume of a preset. Then you would store a copy with the new level but the old one would keep the old level...

The main volume for an entire Performance is not shown on the “Mixing” screen. On the MIXING screen are the individual Part Volumes only.
The Main Volume of the Performance is found by:
Press [EDIT]
Press the upper [COMMON] button
Touch “General” > Volume
This is the main Performance Volume... this affects all 16 Parts.
If you make a change to any parameter of a factory Preset, when you press [STORE] your stored version is placed in the USER BANK.
PROGRAMMING TIP:
Any time you edit a program and are going to store it to User, make sure you update the Name. This will help you tell your edited version from the Factory Preset that you edited. If you fail to edit the Performance Name, you will have a duplicate title in any search that Bank = All, which can be confusing.
In addition to the main Performance Volume, each Part has its own Part Volume. This is found by:
Press [EDIT]
Press [PART SELECT 1-16]
Press the lower [COMMON] button
Touch “Part Settings” > “General” > Volume
This volume is affected by the Channel message cc007 and is the volume represented by the Part Fader.
I didn't see a mention of "Live Set". This is another spot where the Performance volume may be altered. If you recall your Performance through Live Set - the Live Set slot itself can have a volume which will override the Performance volume. So where and how you set the volume depends on your method of Performance recall.

Actually I was trying to do it from the Live Set.
Thanks!
No problem. For more information, the following video from Moessieurs may be useful:
