Editing to produce a piano/strings/brass Performance

When you combine piano with orchestral instruments it produces "sustained" strings and brass.
What editing is needed to be able to have a playable piano sound, without orchestral instruments sustaining?
You can get away with sustain on many string sounds if you are mindful of the pedal use. But not brass.

What exactly are you trying to achieve? If you mean can you have a layered performance where the sustain pedal only affects some parts then yes you can by "filtering" out the sustain pedal from the part that you don't wish it to affect.

Press the part you want to edit
Then Common
Mod Control
Receive SW
Set Sustain to Off
