Can you disable the Keyboard Hold feature for individual parts or performance in order to create a pad drone while playing some piano over it (via layering & splitting)....OR does the Keyboard Hold have to affect the have to affect everything? Thanks.

Yes it:
1. is GLOBAL
2. affects everything.
3. is NOT programmable - you can operate it only from the front panel
The purpose Yamaha stated was to sustain what you play automatically so you don't have to hold the sustain pedal down while you fiddle with the knobs and/or parameter settings trying to find the sound you want.
In other words it was added as an aid when designing sounds - not necessarily when playing.

You can create your own 'drone' sounds by using some combination of envelope shaping, arpeggios or motion sequences. All of those 'solutions' lend themselves to the use of scenes to effect different control actions on different parts of a performance.
