I use midi IN for controlling the reface CS with a breath controller. Will I run into problems if I cut off the mid OUT portion of the cable? I haven't been able to find a mini DIN cable that is not breakout. Does anyone know of a source?

There is no good reason to cut off any portion of the cable.
Forget about finding a mini DIN that is not a breakout cable. If you are looking for cables... when you find a mini DIN breakout to 5-pin MIDI In/Out, buy it and keep it as a spare!
Don’t cut perfectly good cables!
