How to make organ section not sustain

So when we play AWM2 voices for example and want the voice to sustain we step on the pedal like piano.

The organ section which can now be used to voice layering and supplemental voice architecture, not necessarily only organ, all it does is sustain when the keys are held down.

So instead of supplementing other "A"/"B" voices it takes over the voice every time with an unwanted sustain while the other parts fade out.

Is there a way to not sustain the organ section when the keys are held down or could that function be added?

[SETTINGS] button → “Controllers” → “Receive SW” → “Sustain” will let you enable or disable sustain for each section in a Live Set. Turn it Off for Organ, and the organ won't sustain with the sustain pedal.

That's helpful when the sustain pedal is being used but how do I stop organ sustain when only the keys are held down?

Organs automatically sustain while the key is held down. The only thing I could do was to use the F4 & F6 attack/percussion bars only with everything else turned off.

This is a good example. Only the percussive F-organ feature does not automatically sustain while holding the keys.

I'd like to have a bunch of these in the future.

Ah, yes, my suggestion didn't actually address the "while the keys are held down" part, sorry. You're right, the basic FM synth function they have added does not include envelope controls. There are only two envelopes to work with... organ style (on for as long as the key is held), and percussive, as you've seen. Since they're using all 9 bars, it's hard to see an easy way to implement additional controls. Maybe there could somehow be an option to process the sound through the envelope controls that are available in the Keys section.
