Touch the Part you want to change
Touch “Edit” in the pop-in menu
Touch “Part Settings” in the first column > “Pitch” in the second

Here you can set the PB Range for both Downward and Upward directions.
Press [STORE] to save your change to the User Bank.

I found pitch bend settings under Performance/Edit/Part 1/Mod Control/Control Assign but don't see where you can switch the range.

I see curve type and edit user curve so I'm imagining you can do a lot of cool stuff with pitch bend settings but I just want a basic change and I can't seem to find it.

What you found was not the basic PB Range, but a way to manipulate Coarse Tuning in real-time with the Motion Control Engine. The Pitch Bend Wheel has its own parameters within the synth and does not require you use a Control Set to do Standard pitch bending.
