The guitar video showed going into the utility/settings/midi io to change the foot switch from arp to controller 87. However, when I try it, it won't change and doesn't look like the video in that area. Does the foot switch need to be plugged in to make this change?

The firmware version when the video was shot was an earlier version. But programming the FOOT SWITCH is still the same, simply touch the box for Foot Switch and use the Data Dial counterclockwise to select your cc number setting. This becomes the global assignment for the Foot Switch.
No, the Foot Switch does not have to be plugged in to change the parameter setting, but the Foot Switch needs to be plugged-in in order to work.
